Enchilada Casserole

This is a family favorite!

INGREDIENTS

1 package corn tortillas
2 lbs. ground beef or turkey
1/2 cup diced onion
1 (4 oz.) can diced green chiles
1 bottle Trader Joe’s Enchilada Sauce
8-12 oz. light sour cream
1 (16 oz.) bag Trader Joe’s Shredded Mexican Cheese Blend

INSTRUCTIONS

Brown the ground beef/turkey with the onion. Add the chiles to the meat. Add a small amount of sauce to the bottom of a casserole dish. Layer tortillas, meat/onion mixture, sour cream, cheese and sauce. Continue layering the remaining ingredients. Bake at 375 for 30 minutes or until hot and bubbly.

Just made this tonight for the first time. I substituted the ground beef or turkey for leftover shredded salsa chicken I made in the crock pot last night. This dish was amazing! Better than any enchiladas I’ve ever tasted, will make this again for sure. Now I have a great recipe for leftover shredded chicken, thank you CookTJs!

BE CAREFUL! This recipe is NOT gluten free, the enchilada sauce has wheat and barley flour in it. However, I did make this for my husband and he loved it!

Delicious. Didn’t add green chiles or sour cream. Added shredded broccoli and carrots instead. Was a hit! Reminds me of this dish.
